Apple Cake

Mix together in large bowl:  4 cups apples, diced and peeled.  2 cups white sugar.  Add:  2 beaten eggs, 1 cup Crisco oil.  Mix together in large bowl:  2 cups flour, 2 tsp. cinnamon, 1 tsp. salt, 1 1/2 tsp. soda, 2 tsp. vanilla, 1 cup chopped nuts.

Mix all ingredients together, bake at 45 - 50 minutes at 350 degrees.  Nice moist cake.

Apple Crunch Muffins

1 1/2 cups sifted flour, 1 egg slightly beaten, 1/2 cup sugar, 1/2 cup milk, 2 tsp. baking powder, 1 cup diced apples, 1/2 tsp. salt, 1/2 tsp. cinnamon, 1/4 cup shortening.  Sift flour, sugar, baking powder, salt and cinnamon in mixing bow.  Cut in shortening until fine crumbs form.  Combine milk and egg.  Add to dry ingredients along with apples.  Stir just to moisten.  Spoon batter into muffin cups filling 2/3 full.  Sprinkle with:  1/4 cup brown sugar (packed), 1/4 cup chopped nuts, 1/2 tsp. cinnamon (mix these three ingredients before sprinkling on muffins).  Bake at 375 degrees for 25 minutes or until golden borwn.  Serve warm; serves 12.

Apple Crisp

6 cups sliced, pared or unpared apples, 1 cup sifted flour, 1 cup sugar, 1 tsp. baking powder, 3/4 tsp. salt, 1 unbeaten egg, 1/3 cup melted and cooled shortening, 1/2 tsp. cinnamon.  Place slized apples in a greased 6 x 10 inch baking dish.  Mix together with fork until crumbly (the flour, sugar, baking powder, salt, and unbeaten egg).  Sprinkle over the apples.  Pour over all the melted, cooled shortening.  Sprinkle with cinnamon.  Bake 30 - 40 minutes in a moderate oven (350 degrees).  Serve warm with cream or top with milk.  Makes 8 servings.

Apple Crumb Pie

Crumb Topping:  1/2 cup soft butter, 1/2 cup sugar, 1 and 1/2 cups sifted flour.  With pastry blender, crumb together ingredients, makes enough topping for 2 pies.  Filling:  6 or so cups of sliced apples (enough to fill pie pan), TBSP. flour, 3/4 cup sugar, 1 tsp. cinnamon or apple pie spice.  Mix together and pour over sliced apples.  Cook in a pan a few minutes to get apples slightly cooked.  (helps keeps apples from being uncooked in pie).  Pour into pie crust shell.  Top with crumb mixture.  Bake 425 degrees for 15 minutes, then 375 degrees for 30 minutes.

Apple Dessert

Cream Together:  2 cups sugar, 3/4 cup shortening (oleo), 3 eggs.  Add:  7 cups unpeeled, chopped apples, 3 cups flour, 1 tsp. nutmeg, 1 tsp. cinnamon, 3 tsp. soda, 1 cup chopped nuts.  Mix and bake in 13 x 9 x 2 pan at 350 degrees for one hour.

Caramel Sauce for Apple Dessert

Melt:  1/2 cup butter (oleo).  Mix together:  1/2 cup sugar, 4 TBSP. Flour, add:  1/2 cup brown sugar, 1/2 cup cream (evaporated milk or milk may be used), 1 tsp. vanilla.  Cook until thick (scorches easilty), serve cake with warm sauce.

Hot Spiced Cider

1 gallon cider, 12 cloves, 2 cinnamon sticks, 1/2 lemon sliced, 1 TBSP. Honey.  Mix ingredients together in pan.  Simmer 10 minutes to 1 hour. Strain before drinking.  This can be kept in refrigerator and warmed in microwave as needed.
